Salami typical of our region is achieved with lean meat of first choice pork, peeled and minced by hand, fine-grained enough to make the mixture uniform, to which we add cubes of lard. The tannege consists of pepper, salt and a pinch of spice further flavored with a little garlic left to soak in the good Tuscan wine.
